Spinach Quiche

Nutritional Facts: 110 cal each piece for 6 slices; 230 cal each with sausage; 4g carbs

Ingredients:

  • 1 tbsp olive oil, plus more for greasing
  • 1 cup chopped fresh spinach (or more if you like spinach)
  • 1⁄2-1 diced onion
  • 1⁄2 green bell pepper
  • 1⁄2 red bell pepper
  • 1⁄2 tsp salt
  • 1⁄2 tsp ground black pepper
  • 1⁄2 tsp ground nutmeg
  • 8 large eggs, beaten
  • 1⁄2 cup plain almond milk
  • Sausage or bacon (I add Aidells chicken/apple sausage)

Directions:

  1. Preheat oven to 350’F. Grease a 9″ glass pie plate with olive oil (I use an 8″x11.5″ baking dish).
  2. In a small skillet, heat 1 tbsp of olive oil over medium heat and sauté the onion, bell peppers, salt, pepper, and nutmeg for about 5 min, or just until the onions are translucent.
  3. Add the spinach and saute until wilted. Add the veggie mixture to the baking dish.
  4. Saute the chopped sausage with olive oil in the same pan until slightly browned. Add to the baking dish.
  5. Stir the eggs and almond milk together in a small bowl. Add to the baking dish making sure even coverage.
  6. Bake the quiche on the middle oven rack for 30-40 min, or until the center is completely set. Serve warm or at room temperature.
